The dried rhizome of Zingiber officinale (Zingiberaceae). Enters the Spleen, Stomach, Kidney, Heart, and Lung channels. Pungent and hot, it is characterized as 'guarding without roaming' (shou er bu zou), in contrast to the fresh form. It pairs with fu zi in Si Ni Tang to rescue yang, and with wu wei zi and xi xin to warm the Lung and transform thin mucus in Xiao Qing Long Tang.

Ganjiang contains pungent gingerols (6-gingerol) and shogaols plus the sesquiterpene zingiberene; pharmacology shows warming, digestive stimulation, antiemetic, anti-inflammatory, antiplatelet and gastroprotective effects.
